Goetta sausage and gravy with canned biscuits (serves 4):
Ingredients
 1 lb goetta, crumbled (if goetta is not available in your area you can use any breakfast sausage)
 2 tbsp butter or neutral oil
 2 tbsp all-purpose flour
 2 cups milk (adjust for thickness)
 Salt and freshly ground black pepper
 Pinch cayenne or hot sauce (optional)
 1 can refrigerated biscuits (8 biscuits)
Instructions
1. Bake biscuits according to the can’s directions and keep warm.
2. Heat butter/oil in a large skillet over medium. Add crumbled goetta and cook 4–5 minutes until browned and heated through.
3. Sprinkle flour over the goetta, stir 1 minute to cook the raw flour.
4. Gradually pour in milk while stirring, scraping up browned bits. Simmer 3–5 minutes until gravy thickens.
5. Season with salt, plenty of black pepper, and cayenne or hot sauce if using. Thin with extra milk if too thick or finish with 1 tbsp cream for richness.
6. Split biscuits, ladle the goetta gravy over them, and serve immediately.
